6 Can Chicken Tortilla Soup
- 1 (15 ounce) can whole kernel corn, drained
- 1 (14.5 ounce) can chicken broth
- 1 (10.5 ounce) can of condensed cream of chicken soup
- 1 (10 ounce) can chunk chicken
- 1 (15 ounce) can black beans
- 1 (10 ounce) can diced tomatoes with green chile peppers, drained
- Open the cans of corn, chicken broth, cream of chicken soup, chunk chicken, black beans, and diced tomatoes with green chilies. Pour everything into a large saucepan or stock pot. Simmer over medium heat until chicken is heated through.
- Top with Tortilla chips and add your favorite toppings. Suggestions: Sour Cream, Cheese, Avocado, Cilantro, lime juice.
The recipe actually calls for 2 cans of chicken broth and no cream of chicken soup, but I like mine a bit thicker. The other is quite watery. Also, you can drain and rinse the black beans if you don't want your soup to look grayish and/or just don't like the consistency. If you are feeling like going a little more out of your way, there are so many different things you can do to this soup to dress it up, add some spices or veges or whatever you dream up. Of course, you can cut the canned chicken and use cooked chicken, and I'm sure it would taste even better. However, that takes away from the quick and easy part. :)

Just tried this recipe tonight and loved it. I modified it just a bit by adding cumin, cilantro and lime, using chicken breasts and eliminating the cream of chicken. thanks for posting....i've been waiting for a good tortilla soup recipe!
Glad you liked it! Yes, I always like to add Cilantro and lime to my soup too. I haven't tried the cumin though, will have to next time. The cream of chicken soup is really just whether you prefer a thicker or thinner soup. Glad it worked out for you.
